According to the USDA, smoking meats, such as ribs and pork shoulders, creates a pinkish red ring just below the surface. This is a characteristic of cooking meat over a smoldering fire, in our case, hickory wood. Many people in these parts claim they've never seen this before and to that we say, "You're right." Most of the bar-b-que joints in these parts try to "pull a fast one" by steaming their ribs, but at Q4U, the only thing we pull is pork and the only thing fast is our service. Southern Flavors

Texas Style Chili

Ingredients:

  • 3 1/2lb Chuck Blade Steak
  • 1/4 C vegetable oil
  • 2 C Chopped onions
  • 3 Med green peppers, chopped
  • 4 Garlic Cloves, minced
  • 16 oz. tomatoes
  • 6 oz. tomato paste
  • 1/3 C Chili Powder
  • 1/4 C Sugar
  • 2 T Salt
  • 2 T Oregano
  • 3/4  T Black Pepper

Cut steak into 1/2" cubes

Brown meat in oil in Dutch oven, remove and set aside

Add onions, peppers, and garlic to drippings in pan over medium heat

Cook for 10 minutes, stirring occasionally. Add more old if necessary

Return meat to the pan, and add tomatoes  and their liquid and the remaining ingredients

Reduce heat to low, cover and simmer 1-1/2 hours or until meat is for tender, stirring occasionally

Makes 6 or 7 servings

Note: Individual servings may be garnished with chopped onion and shredded  sharp Chedder and Montery Jack cheese. Get Busy!
